1 cup fat-free cream
1 T white vinegar
1 packet active, dry yeast
2 cups quinoa flour
2-1/2 cups soy, bread or all-purpose flour, plus additional flour for dusting
2 T butter or shortening

Filling
1-1/2 lbs ground sirloin
1 packet ranch seasoning
8 oz shredded sharp Cheddar cheese
3 oz grated Romano cheese
1 packet beef gravy mix

Directions

Combine dough ingredients in a bowl, cover the bowl with a damp tea towel and allow to rest for 1 hour. Knead for 2 minutes. Dust rolling area and rolling pin with flour and roll dough to about 1-inch thickness. Allow dough to rest. Preheat oven to 325° F. Brown the meat in a pan until internal temperature reaches 160° F on a meat thermometer. Add ranch seasoning and stir until well-blended. Spread beef mixture evenly over dough and then sprinkle cheeses over beef. Carefully roll up the dough and place on cookie sheet. Bake for 30 minutes. Prepare gravy mix according to packet directions. Remove roll-up when dough is golden brown. Allow to rest for 5 minutes. Slice, top with gravy (to taste) and serve.
